Banger Sausage Patties with Sweet Potato Mash and Caramelized Onions

From The Whole30: The 30-Day Guide to Total Health and Food Freedom. Serves2

Prep Time: 25 minutes
Cook Time: 25 minutes
Total Time: 50 minutes

For the Sausage

1 pound ground pork
¼ teaspoon ground sage
¼ teaspoon garlic powder
¼ teaspoon dried thyme
¼ teaspoon onion powder
¹⁄8 teaspoon cayenne pepper
¹⁄8 teaspoon nutmeg
1 teaspoon salt
¹⁄8 teaspoon black pepper
Grated zest of 1 lemon

For theMash

2 medium sweet potatoes, peeled and cut into large dice
4 tablespoon ghee or clarified butter
½ cup full-fat coconut milk
1 onion, thinly sliced
¼ teaspoon salt
¼ teaspoon black pepper

PREHEAT the oven to 350°F. Bring 4 cups water to a boil in a medium pot over medium-high heat. Line a baking sheet with parchment paper.

PREPARE THE SAUSAGE: In a large mixing bowl, mix all the sausage ingredients. Form into 8 equal patties. Place on a plate and chill in the freezer for 10 to 15 minutes while starting the sweet potato mash.

COOK the sweet potatoes in the boiling water until fork tender, 10 to 15 minutes. Drain and return the potatoes to the pot. Add 1 tablespoon of the ghee and coconut milk. Using a potato masher, immersion blender, or large kitchen fork, mash and mix the sweet potatoes with the ghee and coconut milk. Cover the pot to keep warm and set aside.

REMOVE the sausage from the freezer and place on the parchment paper–lined baking sheet. Bake the sausage patties in the oven for 12 to 15 minutes, until the internal temperature reaches 145°F, and no pink remains in the middle of the patty.

MEANWHILE, heat the remaining 3 tablespoons of ghee in a large skillet over medium heat, swirling to coat the bottom of the pan. When the ghee is hot, add the onion and cook for 15 minutes, turning them periodically as they begin to brown and caramelize. (Do not rush this step—the browner the color, the more concentrated the flavor will be.)

TRANSFER the mashed sweet potatoes to a bowl or serving dish and top with the caramelized onions. Season with salt and pepper and stir to combine. Serve with the sausage patties.

Don’t be intimidated by the long list of spices in this fancier sausage mixture—measuring and mixing is actually really quick. To make it easier on future you, quadruple the spice mixture (the ingredients from sage to pepper), use one-fourth of it (2 heaping teaspoons) in this batch, and store the rest in an airtight container in your pantry for the next time you want to make the sausage.

    FAQs

Can you eat potatoes on Whole30? ›

Yes, you can eat potatoes of all colors under the new Whole30 guidelines, white varieties included. Mash 'em up, roast them, or throw them in the skillet to enjoy. Just don't eat them commercially deep-fried or in packaged chip form to stay Whole30-compliant.

Can you eat oatmeal on Whole30? ›

When you're on Whole30, toast, cereal, and oatmeal won't fly. But that doesn't mean you have to eat a plate of boring scrambled eggs each and every day. These casseroles, egg cups, breakfast stacks, and more will have you looking forward to your morning meal—and full way beyond your morning commute.

    Can I eat bananas on Whole30? ›

What about bananas? Yes, both pickles and bananas are allowed on Whole30. Yet if they are a potential trigger food for you (for instance, the sweetness of bananas sets off a craving for other treats or makes you want to binge on the fruit), then you may consider including them on your “don't eat” list.

Is peanut butter okay on Whole30? ›

Though peanuts and peanut butter aren't allowed on the Whole30 program, other nuts and nut butters are. Cashew butter is loaded with nutrients like healthy fats, magnesium, manganese, and copper. Its smooth, sweet taste pairs well with apples ( 1 ).

Is almond milk allowed on Whole30? ›

It's got only four ingredients: water, organic almonds, organic acacia gum, and sea salt. You've seen this in literally every grocery store, and now you know: Yes, you can drink it while doing Whole30. Silk's unsweetened vanilla carton is fair game, too.

Is canned tuna OK for Whole30? ›

That's why Safe Catch tuna is the very first Whole30 Approved canned tuna. Keep a stash of Safe Catch in your Whole30 pantry for a convenient on-the-go protein; quick, nourishing lunches; and creating delicious dinners. No dairy (milk – cow or goat, cheese, yogurt and ice cream)

    What is a Whole30 potato substitute? ›

Other alternatives like mashed sweet potato, cauliflower, my easy pureed butternut squash, or any other starchy vegetable will work well in place of white potatoes. I am thrilled with how creamy these came out with absolutely zero dairy products.

What vegetables are not allowed on Whole30? ›

Green beans. Most peas (sugar snap, snow, green, yellow, and split peas) Ghee or clarified butter.

Can you have in-n-out fries on Whole30? ›

Potatoes of all varieties are in, but fries and chips are not. (This should not be a surprise. Fries and chips are about as Whole30 as Paleo Pop-Tarts.)

Is bacon allowed on Whole30? ›

Vitamin C is an antioxidant found naturally in foods like citrus, cruciferous vegetables, tomatoes, and potatoes, and is a common additive in fortified foods. Bacon can be a delicious addition to your Whole30 meals, but you'll need to find bacon without added sugar.
